The idea

Nº 01

We cook one menu a night. It changes with the tide, the frost and the coals. Nothing is written down until the morning it is served. You arrive; the room goes dark; and dinner is brought to you, course by course, out of the fire.

Native rock oyster, frozen sea-buckthorn, dill oil, a single grain of smoked salt.

SÖL keeps a short table of suppliers — the tide, the garden and the fire. What arrives decides what is cooked. There is no menu until there is a catch.

The Chef · Ilma Sørvaag

“I don't want you to remember a dish. I want you to remember the dark, and the moment each plate arrived out of it.”

Ilma trained on the cold coast and cooked across four countries before returning to build a single room around one fire. At SÖL she writes nothing down: the menu is decided at the market and finished at the pass, every night, for twenty guests.
